[BUG]: Add macOS 26.x (Tahoe) to the pool of MS-hosted agents #5507

What happened?

We use Azure Pipelines to generate our mobile app builds as our company is a service provider that creates and maintains mobile apps for customers. We can no longer build iOS apps using MS-hosted agents that align with minimum security and OS version support requirements because we cannot use Xcode 26 on the MS-hosted MacOS version.

A issue was filed months ago as an Enhancement but at this point our builds are breaking so I'm creating this as a BUG I don't know what else to open the ticket as when it is for a failure to maintain provided services.
Either send a notification that you will no longer support something, or properly maintain it please - this is impacting our business already.

ITMS-90725: SDK version issue - This app was built with the iOS 18.5 SDK. Starting April 2026, all iOS and iPadOS apps must be built with the iOS 26 SDK or later, included in Xcode 26 or later, in order to be uploaded to App Store Connect or submitted for distribution.
